I've noticed this weird dog on several farms and I'm wondering about it. First it looks like a cute little puppy, then it stretches into a weird version of itself and chases it's tail. Two questions...
Does anyone know why it changes shape?

That's Zoe. She changes shape because she grows from a puppy to a grown dog every 7 days. If you keep her happy by cleaning up unimportant stuff on your farm and putting it in your inventory or selling them, you get dog biscuits for her and get a reward every week.
I think you have her dog house. It's at the left end of the house porch by the mat.

How do you get Zoe? Is it a certain level? or maybe a quest?

Cate, I checked and I only have a flower planter at the left end of the house porch - no dog house.

I think it was a pop-up. Probably a year ago. Wouldn't hurt to look in your inventory though.

I looked at my inventory, I only have frogs, owls & a squirrel. Also, I only have 3 dogs (sheep, lab & a collie).

I asked my husband to help me search about the missing friends since he usually finds stuff when I don't. He found a FB post and nothing else. He snipped an image of it...

Since playing again I'm curious as to how y'all manage your farms.
Prized animals - how many do you tend to keep in inventory of each one for any quest necessities? I keep some in the Prized Barn along with "yet to be blue ribboned" ones.
In the Keeper's Journal I have one quest that as far as I can tell I've completed. It's the Greensleeves III blue ribbon mastery of 25 trees. I've been stuck on 23 forever and have definitely received an award for blue ribboning quite a few trees since I began playing again.
Do you fertilize every crop or grove that you can? I can never make enough fertilizer so I'm a bit choosey about the ones I do.
I used to know the answer to this one. Once you've completed the requirements for expanding a section of your farm with Favors and any recipes/crafts .. can you sell any of those off (like in the co-op Sell Goods tab) without having to go back and redo them?
The Envelope. Used to be that things like baby bottles would stay put until you accept them. Now it seems they automatically go into the game. Say I had 12 bottles before playing. I'd go in and feed babies, then go back to the envelop and grab some more. Now it seems they all just automatically go into the game. I can still do it with water - not accept them until I need them.
That's not all, but I'll save more questions for later.
